To me, Red Beans reminds me very much of pinto beans in flavor and shape. It just slightly firmer in texture and slightly smaller too. It is more red than brown. I love them. served over a bed of Yellow saffron rice. I saute some onions, garlic and green pepper and add to the beans. They are also served over a bed of Vegetarian Dirty Rice. Here is the recipe for that. Vegetarian Dirty Rice (what a funny name for this) This is a vegetarian dish using Boca brand crumble and Swanson brand vegetarian broth. It is very versatile. 4 Tbsp. Olive Oil 1 Tbsp. butter 1 red onion, diced 2 garlic cloves, minced 1 tsp. dry basil 1 tsp dry oregano 1 tsp. dark chili powder 1 tsp. paparika 1/2 tsp. crushed red pepper 2 c. Jasmin rice or any long grain rice 1- 16 oz.can Swanson Vegetarian broth 1 c. cold water Salt and pepper to taste Heat a 2 qt. sauce pan to high, place olive oil and butter in pan. Saute onion, garlic until carmalized. Add basil, oregano, chili powder, paparika, red pepper and rice. Saute rice for three minutes, stirring ocassionally. Add broth and water, stir. Bring to a boil for five minutes. Reduce heat to low and simmer for 20- 25 minutes or until liquid has evaporated. Then add Boca brand crumbles, stir until completely heated through. You can also use Morning Star Farms Crumbles instead of the Boca Brand Crumbles. I found a recipe for red beans and rice. It said that although you could use kidney beans, small red beans were more authentic.
