Corn Millet Muffins

Corn Millet Muffins

 

 

I used to work at a restaurant and these were a popular item. Most

of the recipes were developed by Akasha. I presume this one was

also.

 

 

Mix together:

 

 

4 cups corn meal

1 cup millet

1 1/2 Tbsp. baking powder

 

 

Add:

 

 

1 cup oil

3/4 cup honey

2 cups sour milk

 

 

Mix well. Le set 15 min. Fill paper lined muffin cups about 1/2

full. Bake at 325 degrees until lightly browned and firm.

Makes 18 cupcakes.

I forgot to add this is very good served with basil pesto and/or

Parmesian Cheese.

I wonder if you could use whole wheat flour rather than millet?

I'm getting this all wrong. The pesto and Parmesian are supposed to

go on the Alfredo.

I just want to confirm. This uses whole millet or millet flour? I'm

hoping whole millet. :-)

I have never tried it. The millet makes it somewhat crunchy. It

would change the texture somewhat since flour absorbs liquids much

more than millet. If I were doing it, I would add about 1/8 cup more

flour. If you don't like millet, there are undoubtedly other corn

meal recipes with flour in the files of the group.
