It found it in the December, 2001, issue of Prevention magazine. I'll ut the recipe as it was in the magazine but I make the muffin mix from scratch - don't use the store bought mixes - and I just make one batch (don't double it) and that seems to be fine. Have to warn you though - be sure you use chopped spinach! The first time I made them I didn't notice and used whole spinach - what a mess - muffins with stringy sprinach. Take a 10 oz. package of frozen chopped spinach and cook it per the package instructions. Drain the excess water. In the meantime, prepare two 5.7 oz. boxes of corn muffin mix. Stir the spinach into the batter and pour into a 12 cup muffin tin coated with cooking spray. Bake per muffin mix instructions until a toothpick comes out clean.
