epasote

My DH is from Yucatan and I've been using fresh epszote for over 35

years. It has a strong scent when you break a leaf open, almost like

turpintine. A few leave added to black beans will reduce the gas but

not completey and add a faint flavor, not strong at all. It's good

cooked in all beans. The dried version is O.K. but not as good.

This is a hearty herb and you don't even need to remember to water

it, it takes off on it's own. I need to cut mine down now.
