This recipe is on the side panel of my box of Kraft Quick Cooking Minute

Tapioca. It is the only recipe my Mother ever used.

They also show a recipe using fruit juice for those that do not want to use

eggs or milk.

If the person that purchased her tapioca bulk wants any of these recipes I

will be happy to email them to her but I don't remember who asked now.

1 egg white

Remove from heat.

Quickly stir in egg white mixture until well blended. Stir in vanilla.

Cool 20 minutes, stir. Serve warm or chilled 6 servings. Note: I always

double this recipe.

 

Fruit Juice Tapioca Pudding

1/3 cup sugar

3 Tbsp. Minute Tapioca

Pinch Salt

2 cups apple juice

Mix all ingredients in medium saucepan. Let stand 5 minutes.

Cook on medium heat, stirring constantly, until mixture comes to full boil

[pudding thickens as it cools]. Remove from heat.

Cool 20 minutes; stir. Serve warm or chilled. Makes 4 servings.

VARIATION: Grape juice, pineapple juice, orange juice, grapefruit juice,

cranberry juice, juice blends or mango nectar can be substituted for the apple

juice.

 

Tapioca Pudding

1/3 cup sugar

3 cups milk

1 egg, well beaten

1 tsp. vanilla

Mix sugar, tapioca, mild and egg in medium saucepan; let stand 5 minutes;

Cook on medium heat, stirring constantly until mixture comes to full boil.

(Pudding thickens as it cools) Remove from heat. Stir in vanilla

Cool 20 minutes, stir. Serve warm or chilled. Store leftover pudding in

refrigerator. Makes 6 [1/2 cup] servings.

Note: For creamier pudding, place plastic wrap on surface of pudding while

cooling. For best results, use 2% reduced fat or whole milk. Fat free, 1%

lowfat or lactose-reduced milk can also be used.

 

Microwave: Prepare as directed above in large microwavable bowl. Microwave

on HIGH 10 to 12 minutes comes to full boil, stirring every 3 minutes.

 

Chocolate Tapioca Pudding: Add 3 squares Bakers SemiSweet Baking Chocolate

to saucepan before cooking

I was just about to go grab my box and type this in, after reading Judy's

request for it. Thanks so much for doing that!! So glad I noticed your

post before typing it all out. lol. :)
