Months and months ago Oprah had a series of doctors on and one of them was expounding the benefits of steel cut oats over rolled - but darned if I can remember why - and, of course, Oprah never eats another but! Guest guest Posted January 24, 2007 Report Share Posted January 24, 2007 From what I understand is that rolled oats are steamed and then rolled flat and dried so they cook faster and then digest faster. Since they digest faster this can cause the blood sugar to rise faster. A problem for Diabetics. Steel cut oats are raw and just sliced, so they take longer to cook and longer to digest slowing down the conversion to blood sugar. Unfortunately the nearest Whole Foods is 18 miles away -- a little far to be traveling for groceries. Oh well, guess Amazon.com is still the cheapest bet. Tina M.
