Guest guest Posted January 24, 2007 Report Share Posted January 24, 2007 Garlic-Braised Rapini 8 ounces rapini 1 tbsp. olive oil 1 clove minced garlic or to taste 1 1/2 slices stale dark pumpernickel salt and pepper Remove and discard fibrous base stems of the rapini. Rinse the rapini in a colander and pat dry. In a large, wide skillet, heat the oil. Add the garlic and bread, now saute for 2 to 3 minutes. Stir in the rapini and cook for 3 or 4 minutes longer over medium heat stirring frequently, until the greens are slightly wilted.
