Gurken Salat (Cucumber Salad)

This recipe was posted recently by a member of my organic gardening

group.

 

Gurken Salat(Cucumber Salad)

2 large Cucumbers- peeled

4 Tablespoons sea salt

 

 

Directions:

Grate cucumbers using the disc side of the grater.. " The thinner the

better " .

Toss cucumbers with sea salt and let sit 1 hr.

Drain and rince thoroughly. Squeeze out excess water

" You should have very wilted cucumber slices " .

 

Dressing:

2 Tablespoons apple cider vinegar

1 tab.olive oil

pinch of salt

 

Pour dressing over cukes and refrigerate for at least 1/2 hour before

serving.

 

PS

In our family recipe we add thinly sliced onion when we put on the

drssing.
