Guest guest Posted January 29, 2007 Report Share Posted January 29, 2007 We tend to forget that when we are used to eating reg. home cooked meals with 'meat' we are at first confused by becoming Vegetarian/Vegan. We think we will have nothing to eat but salad. LOL I like to advise people that if their favorite , sometimes ethnic meal is spaghetti,chili,chow mein,or whatever. Create the recipe exactly as you like it but leave out the meat. You will feel comforted by what is familiar to you. Then try some of the differnt recipes in the files and you will find that there isn't enough hours in the day to eat all the wonderful grains, fruits, and veggies. It took me 40 yrs. to try Egg Plant. LOL Being a Vegetarian/Vegan is a lifestyle not a diet. We think of a diet in negative terms, depriving us of the things we 'love' to eat. Choosing to be Vegetarian is a fun adventure and a respect for all living things...Especially ourselves.. I have a great recipe for spicy eggplant dip, but do I peel it? Seed it? What do I do??? Guest guest Posted January 29, 2007 Report Share Posted January 29, 2007 I assume you have one of the large globe eggplants? They are very easy to prepare for dips. Take the eggplant and cut it in half. On a cookie or other baking pan/sheet coat with a thin layer of olive oil and place the eggplant half on it, cut side down. Prick the skin with a fork a few times (to prevent it from ecploding, but no big deal if it does). Bake at 350 F for about 1/2 hour to 45 minutes (put a fork or knife trough it, if it is very soft with no resistance then it is done). Cool it enough to handle and scoop the flesh from the eggplant, leaving the skin and the stems for the compost pile.
