Its description is " Green to Orange, Extremly hot, Use in sauces " The book is " Fast, Fresh & Spicy Vegetarian " By: John Ettinger ISBN# 0761516239 I really like the pepper chart because it gives a heat rating for many peppers, so you can subsitute to your tastes.
