Maureen,

Those recipes sound yummy. Thanks for sending them. I'll have to look for the

limmettes. I've never seen them before. I hope you find them at the co-op next

time you are there. If so, let us know what you think. You're very welcome,

I'm glad you're enjoying this citrus topic too.

Re: Question of the Week - What is your favorite

kind of Citrus Fruit - Judy

Hi Judy,

Those carrots sound great--Thank you for the recipe!

I've never used quinoa flakes and I'm not sure what they are, so I don't

know if they'd work. Sorry! :(

Limettas are naturally sweet lemons or limes, I forget which. They were

on sale at my co-op with a note about how amazing their juice is, but

for some dumb reason I didn't buy any and I've been wondering about 'em

ever since. Hopefully, they'll have more when I go back this weekend.

By the way, I'm really enjoying this citrus discussion--Thanks so much

for starting it!

Coconut Rice with Toasted Coconut

2 cups jasmine rice, washed

1 13.5-oz. can coconut milk

1 cup water

1 cinnamon stick

1/4-teaspoon salt

finely grated zest of one lime

1/2 cup unsweetened shredded coconut

Combine the first 5 ingredients in a saucepan and bring to a boil.

Lower heat, cover pot, and simmer 20 minutes. Add the lime zest and

stir with a fork. Remove from heat, cover again, and let sit for 10 minutes.

Meanwhile, heat a skillet over low-medium heat. Add the coconut and

toast, turning often, for about 3 minutes or until coconut is brown and

toasty.

Remove cinnamon stick from rice and serve, sprinkling the toasted

coconut over each serving. Optional: Garnish with lime wedges

I'm not sure where the lemon pudding recipe came from. It was something

I copied and filed, but forgot to write down where I got it.

Lemon pudding (vegan)

2 cups soy milk

1/2 cup sugar

3 tablespoons cornstarch

3 to 3-1/2 tablespoons lemon juice

2 teaspoons lemon zest

1/8 teaspoon salt

1 tablespoon potato flour

Combine everything except the potato flour in a blender and process

until smooth. While the blender is still running, add the potato

flour. Transfer to a saucepan and heat, stirring constantly, until it

thickens and boils. Cook for about 30 seconds more, stirring

constantly. Remove from heat and pour into four 1/2-cup serving

dishes. Cool before serving.

and about 1/2 water in with some fresh cut up carrots and boils them until

tender but not mushy. I tried some and they were soooooooo good. She said it is

very important to add the carrots to boiling water, not cold water, so they

retain their bright color. I do that too. I'm going to

not to add much water.
