Guest guest
Maureen, Those recipes sound yummy. Thanks for sending them. I'll have to look for the limmettes. I've never seen them before. I hope you find them at the co-op next time you are there. If so, let us know what you think. You're very welcome, I'm glad you're enjoying this citrus topic too. I've never used quinoa flakes and I'm not sure what they are, so I don't know if they'd work. Sorry! Limettas are naturally sweet lemons or limes, I forget which. They were on sale at my co-op with a note about how amazing their juice is, but for some dumb reason I didn't buy any and I've been wondering about 'em ever since. Hopefully, they'll have more when I go back this weekend. By the way, I'm really enjoying this citrus discussion--Thanks so much for starting it! Coconut Rice with Toasted Coconut 2 cups jasmine rice, washed 1 13.5-oz. can coconut milk 1 cup water 1 cinnamon stick 1/4-teaspoon salt finely grated zest of one lime 1/2 cup unsweetened shredded coconut Combine the first 5 ingredients in a saucepan and bring to a boil. Lower heat, cover pot, and simmer 20 minutes. Add the lime zest and stir with a fork. Remove from heat, cover again, and let sit for 10 minutes. Meanwhile, heat a skillet over low-medium heat. Add the coconut and toast, turning often, for about 3 minutes or until coconut is brown and toasty. Remove cinnamon stick from rice and serve, sprinkling the toasted coconut over each serving. Optional: Garnish with lime wedges Source: Vegan with a Vengeance *** I'm not sure where the lemon pudding recipe came from. It was something I copied and filed, but forgot to write down where I got it. Lemon pudding (vegan) 2 cups soy milk 1/2 cup sugar 3 tablespoons cornstarch 3 to 3-1/2 tablespoons lemon juice 2 teaspoons lemon zest 1/8 teaspoon salt 1 tablespoon potato flour Combine everything except the potato flour in a blender and process until smooth. While the blender is still running, add the potato flour. Transfer to a saucepan and heat, stirring constantly, until it thickens and boils. Cook for about 30 seconds more, stirring constantly. Remove from heat and pour into four 1/2-cup serving dishes. Cool before serving. wwjd wrote: > Maureen please send your recipes for the Vegan lemon pudding and coconut rice with lime zest. Sugar and about 1/2 water in with some fresh cut up carrots and boils them until tender but not mushy. I tried some and they were soooooooo good. She said it is very important to add the carrots to boiling water, not cold water, so they retain their bright color. I do that too. I'm going to > have to try and make these here at home.
