Hi

 

Well, here's the end of my first month without meat. I want it less

and less, and hate preparing it more and more!

 

Today I bought vanilla and chocolate soymilk for myself. I can't find

good vegetarian cheese (all I can find contains casein). I want to

cut out dairy if I can because I have a family history of high

cholesterol and heart disease so I figure I don't need the fat. I

don't like low-fat/no-fat cheeses, so right now I'm trying to go easy

on regular stuff but I don't like the fact that I'm eating it.

 

Where can I get good vegetarian cheese (I'd like stuff that melts). I

live in the SF Bay Area and have access to good stores like Whole Foods.

 

Lastly, my husband told me the other day he was kind of jealous of my

meatless meals - he felt I was getting a lot more variety that he is;

right now, he and our daughter are alternating meat and vegetarian.

Maggie,

good for you about sticking with it. It is hard when the family isn't

involved but I have found when you educate them not preach to them they become

more open. I am with you on the cheese thing. I know of a couple of Cabot

cheeses that do not have rennet in it but they are hard to find. I have bought

veggie slices but the last three packages were covered in mold, must not be a

big seller. So I eagerly await peoples suggestions.

Congratulations--That's great news!! I haven't been able to find a

vegan cheese I like either, but I have quick recipes for vegan melty

American " cheese " and vegan cream " cheese " that I like a lot. Just

holler if you want me to post them :-)

I finally cut out dairy after 27 years of eating a lacto-ovo

vegetarian. Once you give up cheese you'll find you miss it less and

less until one day you may find yourself wondering what the appeal

was in the first place (and I LOVED cheeses) The only cheese

substitute I use now is soy parm and only use it occassionally. Try

Asian recipes where cheese is not a factor until you get used to the

idea of living without cheese.

I use Vegan Gourmet and Follow Your Heart

They seem to melt.
