Guest guest Posted February 13, 2007 Report Share Posted February 13, 2007 Zucchini & Italian Sausage Quiche 1 large baked piecrust, baked at 450 degrees for 8 minutes 1 lb. or 2 cups shredded zucchini 1/2 lb. Italian sausage (Tofurkey is a good brand) 1 cup shredded Swiss cheese 1/4 cup Parmesan cheese 1/2 tsp. salt 1/4 tsp. white pepper 3 large eggs or 4 medium eggs 1 1/2 cups half & half Preheat oven to 450 degrees. Crumble or slice and cook Italian sausages. Saute zucchini in 2 tbsps. butter. Drain. Spread cooked, drained zucchini on bottom of baked pie crust. Sprinkle on sausage and shredded Swiss cheese. Lightly beat eggs. Add 1 1/2 cups half & half, 1/4 cup Parmesan cheese, 1/2 tsp. salt, 1/4 tsp. white pepper. Blend well. Pour into pie shell. Bake in hot oven 450 degrees for 15 minutes, lower oven to 350 degrees and bake 15 minutes. or until center is almost firm but still cool.
