Hi everybody. I have been a vegetarian for a while and

am phasing into a vegan. I am having a hard time and I

feel a little lost. Can anyone give me some advice on

what I should know, where to get information, books to

read, foods to buy or not to buy, etc. Also if there

are any tips anyone has on losing weight as a vegan. I

am not over weight but would be a little more

comfortable about 20 pounds lighter. Thanks for the

you can always ask questions here..

but yer sorta asking the equivalent to "can you teach me latin"

heh

there is scores of information out there, tons of things you can eat, things you shouldn't eat, etc...

just type vegan into a search engine, and get the 50 yd stare as you try to digest it all

www.vegsource .com is a good place to start

sorry..use to have lotsa links saved, but this is my 3rd computer in like 2 months...never been able to transfer the info over from one to another...

stay away from any processed foods, eat processed grains(like pasta, er cakes, etc) sparingly..lotsa fruits and veggies..exercise...

i'm not talking jumpin jacks here(tho you can if you want), but..go fer a brisk walk several times a week..er wotever..

i should follow my own advice

 

losing weight is easy..its doing it smartly, and keepin it off is always the challenge...i can drop 10lbs in less then 24 hrs...it wouldn't be healthy..but i could do it

thats not the point..its better if you slowly lose weight, that way yer metabolism adjusts, etc..

if you have any questions, er more pointed ones, just chime away

a low fat vegan diet is the answer ,- cut down on fats/oils,

fried food and refined sugar/ biscuits/cakes. Eat more fruit,

especially before meals and drink lots of water and do

more excersize,

I found Plant Based Nutrition by Stephen Walsh a helpful book, with concise summaries at the end of each chapter.

Afraid I must disagree here Frags. Actually no, I'm not afraid at all! It might be easy for *you* but for millions of others it isn't. It can be done but it ain't easy, I know, I've done it. Tho you're right that keeping it off is the challenge.

So what's this way of dropping 10lbs in less than 24 hours? Tho if it involves surgery I'm not interested!

nah..anyone can lose weight, and quickly...thats why so many of those fad diets work...

but..its only temporary..and it all just comes back, er you damage yer health, er some other effect...

to lose weight and keep it off generally means a change in a lifestyle..more exercise, eating better, wot have you

 

as fer me dropping 10 lbs in a day...it desn't involve surgery..but i wouldn't recoomend it either

unless you want to be all touchy feely with someone fer about 12 hours..and luv the carpet..luv the chair cushions..etc...

Hi and welcome!

I would recommend 2 cookbooks: " How It All Vegan " and " The Garden of

Vegan. " Both have simple, tasty recipes and also information on

substitution, etc.

Creamy Cottage " Cheese "

Ingredients (use vegan versions):

 

* 1/2 lb. extra-firm silken tofu

* 1/4 cup vegan mayonnaise

* 1/2 teaspoon salt

* 1/2 teaspoon garlic powder

* 1/2 teaspoon dill weed or 2 tablespoon chopped chives (I prefer

chopped chives)

 

Directions:

 

Place all ingredients in a large bowl. Stir together till well

combined. Transfer to a storage container and chill in fridge. It will

be fresh for about 5 days. This recipe is delicious. You will love it.

Believe me.

 

Serves: 8-12

 

Preparation time: approx 20 min.

Egg and Dairy Replacers

 

As a binder, substitute for each egg:

 

* 1/4 cup (2 ounces) soft tofu blended with the liquid ingredients

of the recipe, or

* 1 small banana, mashed, or

* 1/4 cup applesauce, or

* 2 tablespoons cornstarch or arrowroot starch, or Ener-G Egg

Replacer or another commercial mix found in health food stores.

 

The following substitutions can be made for dairy products:

 

* Soy milk, rice milk, potato milk, nut milk, or water (in some

recipes) may be used.

* Buttermilk can be replaced with soured soy or rice milk. For

each Cup of buttermilk, use 1 cup soymilk plus 1 tablespoon of vinegar.

* Soy cheese available in health food stores. (Be aware that many

soy cheeses contain casein, which is a dairy product.)

* Crumbled tofu can be substituted for cottage cheese or ricotta

cheese in lasagna and similar dishes.

* Several brands of nondairy cream cheese are available in some
