After reading through some of the archives I thought I'd better stop by and say hello. I've been vegetarian since '96 and vegan (again!) for 2 weeks. I was vegan for 4 or 5 months a few years ago then fell off the wagon. I'm mostly doing it for health reasons, but also appreciate the many other good reasons like animal welfare and impact on the planet. A few pages back in the archives, chickalunatic was asking about how to be vegan on the cheap. I think someone made the suggestion I was thinking, burritos. I used to keep around bulk dried refried beans, then just reconstituted exactly how much I wanted. Wrap it up in a flour tortilla with a bit of salsa. Some fresh cilantro will make it even better. Also, I always keep a bag of peas and a bag of corn in the freezer. Toss a bit of each in your ramen. You could do the same with frozen spinach. I liked the corn sometimes on my burritos. Canned refried or even whole beans work just as well. Fruit can be really cheap if you buy what's in season. Bananas at the market today were $0.33/pound. That ended up being 3 bananas for $0.33! Plus they're easily portable, self contained food. I also happen to like peanut butter & banana sandwiches, but that's not for everyone. I've made this caribbean black bean soup recipe a number of times and it tastes like something you slaved over but it's really, really simple. It's not a vegan cookbook, but does have a few vegan recipes. Save tons of money by purchasing ethnic ingredients like a lot of the ones in this recipe at an international market. I know Heinz makes some...they're in my cabinet! If cooking up rice is hard for you, you can get that quick cooking brown rice that comes in little packets you just boil in water for a bit. Saucy beans and brown rice will certainly fill you up. Most of the things I've suggested are made of ingredients you can keep around and not worry about going bad. I have read somewhere that non-organic peppers are highly sprayed with pesticides, so try always to get organic. I don't buy oranges as I am allergic to them :-( Jo Ouch! The last frost used always to be the last week of May, but the last two years has been in April. I have one south facing window that would be suitable, in my kitchen. Guest guest Posted November 16, 2004 Report Share Posted November 16, 2004 start in Feb. sometime then generally you start bell peppers about 8 weeks indoors before last frost.... bell peppers(and all peppers in general) like it hot..that maybe an issue fer you as well find out if there are any local varieties bredd specifically fer yer climate keep the seedlings moist, but not soggy in a south facing window.. make sure to turn them after the sprout..er you 'll end up with em growin leanin toward the window watch for moisture..
