But the Co-op didn't have any Tofurkey stuffing, so I broke down and bought a small Unturkey. I've heard mixed things about it, but I'm fasting until Christmas Eve and really want some stuffing and this was the only way I could get it. I'll let you all know what I think. Everyone is very cool and no one criticizes but they do find it easier to not have to come up with a meal. My SIL also hosted Thanksgiving so I'm trying to make it as easy as possible on her. I'm making a mushroom pot pie with potatoes and leeks. I've been making a lot of these lately - good winter comfort food. I don't really have a recipe but they always seem to turn out okay. I'll also be bringing some green beans (found some organic today), homemade applesauce and some sugar cookies. I think it was Veg Family that sent out a newsletter with a sugar cookie recipe.
