i'm sorta out of ingredients..and with me possibly losing my job, and maybe an

emergency flight to either spokane er montana on the immediate horizon, looks

like i'll be out of ingredients for a bit

Sorry kind of late on this. Here's one I tried recently. I'm a big fan

of oatmeal choc chip cookies. I used the banana instead of tofu in this

recipe and enjoyed the faint banana flavor it added. If you hate banana

though, go with the tofu. Oh, and by flour, use the flour of your

choice. I usually just use unbleached white or whole wheat pastry

flour. Same with the dry sweetener. I usually use turbinado. Also,

don't press them too flat or they get too crispy.

Maureen's Oatmeal Chocolate Chip Cookies

 

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

3/4 cup flour

1/2 cup dry sweetener

2 cups rolled oat flakes

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1/3 cup soft tofu or 1/2 banana

1/3 cup olive oil

1/2 cup maple syrup

1 tablespoon vanilla extract

1 cup chocolate or carob chips -- to 1 1/2 cups

 

Preheat oven to 350 degrees F. In a large bowl, stir together the

flour, sweetener, rolled oats, baking soda, baking powder, and salt. In

a blender or food processor, blend together the tofu or banana, oil,

maple syrup, and vanilla. Pour tofu (banana) mixture into flour mixture

and stir. Add the chocolate chips and stir until well incorporated.

Spoon a heaping tablespoon of dough onto a cookie sheet and press flat

with your fingers. Bake for 12-15 minutes or until edges are browned.

Makes 10-14 cookies depending on size.

Any dry sweetener you use. If you still use regular white sugar, use

that. I use turbinado.

I like this recipe, too. I generally add some spices, though, as a

hate a " bland " cookie. Ginger powder, nutmeg, cinnamin, whatever you

have on hand and enjoy in your cookies. I also usually do 1/2

raisins and 1/2 chocolate chips. Theye are good together.

Now I want to make cookies... :)
