Turns out thick and creamy. Laura ¡ª¡ª¡ª¡ª¡ª¡ª¡ª¡ª¡ª¡ª¡ª¡ª¡ª¡ª¡ª¡ª¨C Fennel-Flavored Urad Dal Soup (Sada Urad Dal) Serving Size : 4 Amount Measure Ingredient ¨C Preparation Method ¡ª¡ª¨C ¡ª¡ª¡ª¡ª ¡ª¡ª¡ª¡ª¡ª¡ª¡ª¡ª¡ª¡ª¨C 2/3 cup split urad dal ¨C without skins 1 tablespoon fresh ginger root ¨C scraped and coarsely chopped 1 teaspoon fennel seed 6 cups water 1/3 cup fresh mint ¨C coarsely chopped 1 1/4 teaspoons salt 3 tablespoons peanut oil 1 whole dried red chili ¨C broken into bits 1 1/2 teaspoons cumin seeds 1/4 teaspoon asafetida powder (hing) 2 medium firm ripe tomatoes ¨C diced Sort, wash and drain the split urad dal. Combine the ginger root, fennel seeds and 1 cup of the water in a blender. Blend at high speed for 1 minute. Place the spiced water, remaining plain water, urad dal and half of the mint in a heavy 3-quart nonstick saucepan over high heat and bring to a boil. Reduce the heat to moderately low, cover with a tight-fitting lid and boil gently for 1 hour or until the dal is soft and fully cooked. Remove from the heat, uncover, add the salt and beat with a wire whisk or rotary beater until the dal soup is creamy smooth. Heat the oil in a small saucepan over moderate to moderately high heat. When it is hot, drop in the chili pieces and cumin seeds in rapid succession and fry until the cumin seeds turn brown. Add the asafetida powder and after just 1-2 seconds add the tomatoes. Cook for 3-4 minutes or until the tomatoes are reduced to a puree. Pour into the dal, cover immediately and allow the fried seasonings to soak into the hot dal for 1-2 minutes. So breakfast was cereal, lunch was leftover dal & potatoes with some poori I bought ready made and stuck in the freezer for just such occasions, and dinner was leftovers from that melange recipe. Oh, and I just made cookies. Tomorrow we should thaw and be able to get out of the house. And it's about time to start hitting the wine again... Heh. I should check out lanesplitter some time. Vegan pizza, I'm assuming. Today, I've been mostly snacking. Bagel for breakfast, nuts and grapes and olives and stuff as little snacks. Oh, and did you know Vienna Fingers are vegan?? I have eaten a lot of cookies today.
