In the touristcentres you should have no problem finding a vegetarian restaurants, especially Cusco and Arequipa, and of course, Lima.... Vegetarians and people with allergies should be able to list all the foods they can not eat(in spanish). By saying no como carne, people may assume you eat eggs. Restaurant staff willoften bend over backwardsto get exactly what you want, but you need to request it" how's that fer a beginning?
