If you contact them they may be able to give some helpful advice. http://www.vegiventures.com/ I went to Peru in 1993, and at the time I was veggie, not vegan, but most of the restaurants we went in were very helpful and made something veggie for me (although there was a lot of omlette in there). Certainly Lima and Cuzco are very used to tourists, and I can only imagine it's got better as when I was there the tourist numbers had dropped off as at the time there was a lot of terrorist activity, which the Peruvian government has all but eradicated since. Also I've got a Lonely Planet guide to traveller's Spanish, specifically aimed at the South American market. It may be worth getting as it has a whole host of useful, and possibly not so useful, phrases. Anyway, hope you get to go 'cos it's a beautiful country, probably my favourite that I've visited.
