Sounds yummy. I love soup. For canned soups, my favorite vegan choices are Andersen's Split Pea and Progresso's Lentil. Oh, and Campbell's tomato, but that feels like junk food to me, so I don't buy it often. When I'm going to make soup, I sometimes make one of these easy ones: White bean soup (http://www.reluctantvegan.com/2005/01/menus-real-and-imagined.html), with or without some greens thrown in (escarole is good; any greens will work) Maria's Soup, the stuff our housekeeper made for me when I was sick as a child: Boil equal numbers of cut-up tomatoes, potatoes, and onions in water, salt, and olive oil until the potatoes start to fall apart. This is lovely hot or cold, but no one in my family likes it but me, so I don't make it very often. World's easiest bean soup: One can of refried or other beans, one can of tomato juice or V-8, some salsa, and enough water, salt, and pepper to make it how you like it. Heat until hot. Eat. " Tortilla Soup " (what I'm eating now): Take any soup, canned or homemade. Heat until hot. Add a bunch of crushed tortilla chips. Eat. Udon soup: Make packaged udon according to directions, but before the water boils, throw in chopped veggies (onions, bok choy, whatever) and a can of mock chicken (seitan). Add soy sauce and/or garlic to taste. James likes this with five-spice powder, but I find that stuff yucky, so I don't use it. serene -- " It is human nature to hate the man whom you have hurt.
