I use gluten to cut in strips and to make a use in Stir Fry. Here is my recipe from the files. http://tinyurl.com/2lmqje It uses Worthington Choplets, which are prepared canned Gluten Patties in a broth. I love to bread slices of it with Italian bread crumbs and fry. I also make a casserole with them after I bread and fry them. Here is how I do it. I layer the breaded and fried gluten patties into a casserole dish. I like to cut 1/4 of circles. Then I miss some of the broth from the gluten, with some sour cream, mushroom soup and diced onions. I pour this over the patties and bake them. It is very good. You can cut them up in vegetable stews. Enjoy this very versatile food. Judy This is my mother's tried and true recipe for gluten steaks. She has great success with it. GLUTEN 1 3/4 cup water 3 Tbsp soy sauce 1 Tbsp onion powder 1 Tbsp garlic powder 1 Tbsp McKay's " chicken " Style seasoning 1/4 cup raw wheat germ 1/4 cup oatmeal 3 cups instant gluten flour BROTH 4 quarts water 2 Tbsp McKay's " chicken " style seasoning 1 bay leaf 1/3 cup soy sauce 1 tsp vegex or equiv. Knead gluten until all flour is mixed in. Make a roll and slice in thin slice. Press between hands or on floured board to make flat for sandwiches. Drop into boiled broth and cook for 1 hour stirring occasionally. Drain in colander. Save broth for making gravy or stew. Can than put on greased cookie sheets in single layers and put in freezer for 2 hours or so and then put in bags. Can then take out just what you want to fix at a time. So many great uses. Dip in floured batter and fry to put on buns as a burger. Grind up to make chili or sloppy Joes. Cut up and put in stew or stroganoff, etc. ***Important note: vital gluten flour not the same as instant and will not work as well. Instant gluten flour is not easy to find. I have a box of quick mix seitan, and I am not sure of what to do with it. I have the instructions on the box, yes, but I keep seeing recipies where it says small bite size pieces of seitan. How would I get small pieces? I am just kind of confused by the concept of this particular food. Any kind of information (such as seitan101 for dummies) would be greatly appreciated!
