I make a double batch of bean burgers (nope they don't taste like the alternative meat products) and I freeze them. They are quick to pull out and make a nice burger in a bun with all the fixings and add a side dish. I dice up veggies and toss in the rice cooker with broth and rice, makes a great side dish and so much healthier than Rice A Roni. Check in your recipes files, we ever have a kids recipe folder. Just saute up some veggies, add lentils & broth or water & cook. Tadaa!! Guest guest Posted February 25, 2007 Report Share Posted February 25, 2007 I am a new veggie too. I haven't found a tofu recipie I like. But we have found Qouron (sp?) nuggets. They are fabulouse! Our son thinks they are from McD's. They are so much better for you. I also like Morning Star Farms Chik Strips. They are sietan. I use them in fajitas, quesadillas and casseroles. It is good enough that my mother in law doesn't know the difference. I also understand your time restrains. We have three children and we both work. My husband is in the Navy so he also gone a lot leaving me to do it all. SO for us easier is better. Best thing I can say is " Crock Pot " And do a lot of batch cooking on the weekend. For instance today I will make enough food for 1 week and freeze it. So this weeks menu is below. All things frozen in muffin tins are rmove from the tins and stored in containers and bags to allow easy access. Hope all of this helps Liudwih Menu Lentil Barley Soup (1 lg container for dinner 4 small for lunches) Lentil Loaf (24 muffin size for dinners and lunches) Bannana Bread with whole grains and walnuts (2 loafs sliced and ind. Frozen) Faux Bolognese sauce (1 lg container for dinner 4 small forother recipies) 2 batches of whole wheat pizza dough (frozen) For Friday night " pizza night " Faux chicken casserole (2 pans for dinner with left overs for lunches) Sauteed veggies (olives, onions, peppers and mushrooms) frozen in muffin tins. Friday Night Pizza Night 1 jar of Alfredo sauce 1/2 of Swiss cheese 6 tins of sauteed veggies 1 batch of pizza dough Roll pizza dough out on a cookie sheet Place 1/2 jar of Alfredo in a strip down the middle of the dough. Leave at least a 2-4 inch border on all sides. Cover sauce with veggies and Swiss Drizzle reamaning sauce Fold ends up (like a burrito) and then fold sides over the filling. Guest guest Posted February 25, 2007 Report Share Posted February 25, 2007 No it's not but I have attached it below. 1 package Morning Star Farms Meal Starters Chik'n Strips (I've been told any kind of seitan will work. But I like the flavor of this.) Low Fat or Fat free Cheddar cheese soup or cream of celery. (the original called for cream of chicken. If you find a better replacement please let me know) 1 can of Grands Cresent rolls (preferably low fat if you can find it) 1 package of fat free shredded cheddar cheese. 1/2 can of soy milk, water or milk Pre-heat oven to 350. Mince the " chicken " . Place it in a mixing bowl. Add 1/2 the cheese. Mix well. Spray a 10 x 13 baking pan with Pam. Unroll cresent rolls. Place a handful of Chik mix onto the cresent and roll-up. (It s a bit tricky) Place each rolled cresent in the pan. Bake for 15 to 20 minutes. Meanwhile add soup and milk to the remaining chik mix. Mix well. After baking the cresents for the initial 15-20 minutes pour the soup mix over and top with remaining cheese. Bake for another 15 - 20 minutes. Please note that fat free cheese doesn't brown. Hope you like it! I certainly fills my husbands Wonder bread, June Cleaver, small town boy from KS cravings. LOL My mother in law would die to know how I changed her recipie.
