When I became a vegetarian there were no alternative products around and few cookbooks, no support groups. I took a many many years of vegetarian bashing from my brother0in0law and sister too. Guess what? They are vegetarians now for over 4 years. I can't tell you how many coworkers and friends have become vegetarians and when they made the decision they would come to me for recipes and help. Many of those vegetarians had made vegetarian jokes in the past and would also comment on , " Donna how do you do it, that's one thing I will never be a vegetarian. When I became a Vegetarian 25 + yrs. ago there were no stores that sold organic food and now all of our local neighborhood markets sell so many different types of orgaincs both fresh , frozen and canned. There was not a single restaurant in our state that had Vegetarian meals and now every restaurant in our town has several Vegetarian/Vegan meals on their menu. I can buy fresh organic fruits and veggies at my local farmer's market. My family and friends thought I was some kind of a kook for years,but now many of them are eating similar diets. We now have a few family members who are Vegetarian and most of the others including my 87 yr.old mother eat little or no meat. I've noticed that people in general are now curious about my lifestyle and ask for information. And then there is 'this' wonderful group with so many new recipes that I can't keep up with them. I try to experiment with a new one every week and then forward them on to relatives and friends. Life is just way too much fun and so many are now eating healthy. Guest guest Posted February 25, 2007 Report Share Posted February 25, 2007 I usually just cook regular and leave the meat out. I like spaghetti with marinara with sauteed mushrooms and peppers. I like to put on a can of black beans, too. We eat casseroles and just leave the meat out. I love egplant parmesean and spinach lasagna. My non-vegetarian husband loves the vairety and flavors. He likes the lower grocery bills, too.
