Vegan Lunchbox Apricot Date Fudge

For those of you who keep up with the vegan lunchbox blog here is the recipe for

apricot date fudge she talked about traveling with..

 

1 cup apricots

1 cup dates

1 cup walnuts

handful of raisins

2 tablespoon wheat germ

1 cup sweetened coconut

juice of 1/2 lime

 

add the fruit, nuts and wheat germ and grind in food processor. Knead in

coconut and lime. Roll into mini balls and store in air tight container.

1 1/2 pounds

This looks really good - when you say 1 cup sweetened coconut - is

that coconut milk or dessicated coconut?

great if you dont mind let us know how it is dried fruit is so expensive I

wont buy them if it turns out to be a dud. But dates are high in iron so I was

looking for something good for my son who is always low.

Dried fruits are dried, so they are more expensive per pound, just

like dried herbs.

 

However, I can buy dried fruit by the pound at my local coop--no

packaging. I even bring my own paper bag, so I am not filling up the

landfill. I can buy just what I need, not what some company wants to

sell me. I buy a lot of dried apricots and peaches for my baking

because I intensely dislike raisins. I dice them finely and soak them

in brandy before adding them to oatmeal cookies. They are great.

I don't like raisons either, and usually use craisons instead, but I will try

this. I do liike dried appricots nd peaches. I got a bag of 'no sulfer " dried

blueberries at costco that I am enjoying.
