Comfort food for flu- xpost from LJ Liudwith

Here is what I made the other day.

 

I sauteed up some onions, garlic, carrots, and bell peppers, added a little bit

of sage, some celery salt, and I think paprika then some frozen corn. Then I

poured in a box of vegetable broth and while that was coming to the boil I

washed off some barley and through that in to. I let it boil for a couple of

minutes and then turned it down to a simmer. I simmered until the barley was

soft. I forgot I also put in a can of black beans.

 

You can also just open up a box of veg broth pour in into a pot bring to a boil

and add some noodles to it.

 

Feel better.

__,_._,__I am a new veg and I have a bonified case of the flu. (Blood test

proved it yeck) Anyway I am looking for some good vegan replacments for

chicken soup and other comfort foods. Any ideas? The faster and easier the

better. Also husband proof would be great as he is taking care of me and

really doesn't know his way around the kitchen very well! Gotta love him for

trying though. ( he just brought home chicken and dumplings from cracker

barrel that he ordered with no chicken. I just smiled said thanks and put it

in the fridge. I didn't have heart to mention the chicken broth. He tried so

hard and cracker barrel is 40 minutes away. It's the thought.)

Thank you all for the help. They all sound wonderful. With the sage and

veggie broth I think this may have the flavor of chicken soup I am missing.

you could use 'poultry seasoning'.

For today I made a mock chicken soup. I took Barley covered it in vegetarian

broth. Added a ton of cerlery, onion, garlic, carrots, garlic and did I

mention garlic? I also added sage and herbs de Provence. Simply simmered it

until the veggies pretty much dissolved (easier on the throat) and the barey

was really saoft. I then mixed in about a cup of precooked lentils from my

freezer. I was very good. Not exactly what I wanted but close. DH is

stoppping at the commissary to pick up some Amy's non- chicken noodle soup

on his way home from work.

Did you see my recipe in the soup files for Potato " Chicken " Noodle

Soup? It is excellent. I make it often as it is a favorite here.
