Broccoli Mushroom Leek Casserole

 

1 stalk of broccoli, broken into little flowerettes (dice stalk as well)

3/4 C fresh sliced mushrooms (more if you prefer)

1/2 cup leeks sliced thin (or 1 medium onion)

3 C cooked brown rice

1 C soymilk

salt and pepper to taste

1 C grated cheddar cheese

 

Preheat oven to 350 degrees F.

In medium pan, pour in 1/2 cup water and add broccoli, mushrooms and

leeks. Simmer over medium heat until broccoli is slightly soft.

 

In greased casserole, combine cooked rice, broccoli, leeks, mushrooms,

and soymilk.

 

Mix well. Add salt and pepper. Sprinkle grated cheese on top.

Bake in over for 20-25 minutes.

Serves: 4-6
