Anyway, although I tried to cut the recipe in half, there is way tooo much left. I was about to throw it out, but that's just a waste of food. So, here I am, waiting for suggestions to what I can do with the leftovers. How can I have it two nights in a row? That way you can just pop it into a small casserole dish and either reheat, covered in the microwave or the oven. If doing in an over, you could remove the cover the last few minutes to give it a more crispy top, if that is what it had originally. Makes for a quick meal, later on. Guest guest Posted March 6, 2007 Report Share Posted March 6, 2007 I almost always freeze leftovers. They're super handy for those nights there's no time to cook. If there doesn't seem to be enough to bother with freezing, I keep them on hand in the fridge.
