heres what I did with leftover rice

4 cloves garlic minced

8 oz white mushrooms diced

veggie broth

1 cup frozen chopped spinach

1 cup pine nuts

4 cups leftover rice

 

1. Saute the garlic and mushroom until tender add the drained spinach and pine

nuts until heated and stir in the rice. Very simple and tasted real good
