any diabetic vegetarians(I'm new)

Hi. So far I'm finding some great recipes on this group. Everyone seems really

friendly. I just became vegetarian(lacto) last month. Although my dairy is

limited due to diabetes and trying to get the cholesterol down. Just wondered if

there were any diabetics out there who are vegetarian? Also if I need to watch

out for any vitamin deficiencies. Not sure what advice to take as it is all

mixed. So far my body is telling me good things as the weight is down and so are

the insulin levels. Dont' know why I didn't think about this the last fifteen

years of having diabets. I guess I was just ready. Thanks.

Hi Emily,

 

Yup. I've been ovo lacto for 30 years and I had some blood work done

this last January. My A1c was 12.2, my cholesterol was 280. I was a

wildly out of control diabetic and my diet was terrible. (Far too much

emphasis on dairy, refined grains, starchy carbs and salt.)

 

I've been working hard on reversing the disease with diet and exercise.

I've become vegan. I am definitely seeing positive results. My fasting

glucose numbers have improved dramatically. In fact, this morning my

fasting glucose was 85. Last January, right after my diagnosis, it was

221. I've lost 16.5 lbs and have more to go. And all this without meds

- my doctor wanted me on Metformin, insulin, and Zocor. I haven't yet

had my blood work repeated, but I'm curious to know how improved all

those bad numbers will be.

 

Welcome to the list! We have every flavor of vegetarian and vegan here

Hi Emily,

 

I'm diabetic too....but though diet changes, I've gone from A1C's of

11.3 to 8.3 and finally 7.3. I only started changing my diet to add

more vegetables. When I was 11.3, I was taking gluctrol,avandia, and

metformin all max dose. I stopped them on my on (not a

recommendation for anyone!!!)...change eatting habits and have steady

reducing my A1C's.

 

At my job (hospital) the cafeteria has the worst foods. Lots of

fried foods, greasy, gravies, and very little vegetables. My first

diet change was to add salads, salads, and salads. I put anything on

a salad but my favorite is kidney beans, chickpea's, and spinach to

the basic salad. I then added veggie burger. At home I eat a lot

better. I'm starting to pack my lunch...major snack foods. I like

hummus and vegetables, crackers and peanut butter, and plenty of

fruits.

 

I also park farther from hospital...walking helps too...

I'm also a diabetic, but I have type one diabetes (genetic). I've been

a diabetic since I was 16 (I'm 27 now). I've been a vegetarian for a

little over one year, but I rarely ate meat before. My A1C's run

between 6.5-7.

I think the key with diabetes and vegetarianism is to substitute the

meat you used to eat with veggies, fruit, beans, etc. - not with carbs.

I think new vegetarians have a tendency to reach for " easy " foods,

which are more often than not, junk food. At least, that was my problem

at first. I would, for example, eat lots of pasta and lots of cheese

for dinner meals. Having too many carbs in one meal is what hurts

diabetics the most.

I am not diabetic but it is true it is easy to reach for carbs when

you are a vegetarian. My name is Tracey and I am new to the group

too. I have been a vegetarian since 1992 and just recently I gave up

dairy. I am looking for new recipes and ideas. I am going to go to

Whole Foods this week and buy this egg replacement thingy I read

about online. And I want to try all different types of tofu. Any

other tips I should know.

Hi all! I'm new to the list too. I was a vegetarian years ago, but

then compromised my eating preferences when I married my " meat and

potatoes " hubby. A few months ago I decided to return to being

vegetarian and my teenage daughter has joined me. Being lactose

intolerant, we are basically vegan although needing to learn a few more

things before becoming entirely vegan.

 

I am also mildly diabetic, meaning my fasting glucose is always great

but insulin resistance results in some higher than average after meal

blood sugars. I'm trying to make sure I balance vegan proteins and

good complex carbohydrates. I'm hoping to get some great ideas and

recipes on this list!

Just a quick question, if I submit a recipe do *I* post it to the files

in addition to sending it as a message, or does the list owner do

that? I'm never sure how things get in the files; it is different in

different groups I think. *grin*

treasure box of recipes that are filed into different catogories every day.
