Guest guest Posted March 7, 2007 Report Share Posted March 7, 2007 * Exported from MasterCook * Gnocchi With Broad Beans & Mushrooms Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Easy Quick Tried and True Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 350 grams vacuum packed potato gnocchi 2 tablespoons olive oil 9 ounces small cup mushrooms -- halved 2 cloves garlic -- crushed 8 ounces frozen baby broad beans 3 tablespoons chopped tarragon 1 tub mascarpone cheese -- (250 g ) 1 tablespoon lemon juice vegetarian parmesan style cheese shavings and pared lemon zest -- to garnish Cook the gnocchi according to the pack instructions. Drain and set aside. Heat the oil in a frying pan, add the mushrooms and fry quickly over a high heat until browned. Lift out with a slotted spoon and add to the gnocchi. Wipe out the pan then add the garlic, beans, tarragon and mascarpone. Heat gently, stirring until the mascarpone has melted. Add the lemon juice, mushrooms and gnocchi to the frying pan. Heat through for 1 min. Season to taste. Divide between serving plates and scatter over the cheese shavings and lemon zest. Serve with salad leaves, if liked.
