I am finding this transition very frustrating...lol! I am so used to 'meat and potatoes' kinda cook that I feel completely lost in my own kitchen. We have two boys: Joe is 15 and John is 9 and while John hardly ever eats meat anyway (except for Burger King chicken tenders), Joe is a 'carnivore' so he is not too pleased with this decision. When I asked him to make a list of vegetables he would like me to keep in the house he said 'corn'...lol! Well he also loves mashed potatoes, they both do. John is more fexible since he eats hot lunch in school and is willing to eat what they serve him or at least try it. I know he gets a balanced meal (for the most part) at least once a day during the week. I have been perusing the site and the awesome recipes you all have posted, that is so helpful, thanks for sharing Anyway, I wanted to know if you can recommend a book or DVD to help us with this change of lifestyle. One of my sons is extremely selective about food, the other not so much, but all of my guys (hubby and kids) like meat a lot. I don't have the energy most nights to fix multiple meals, so I really do want to be more clever about all of this and succeed this time. I'm looking forward to fresh ideas and insights. Here is one I found: http://vegkitchen.com/tips/protein.htm (this page talks about protein in vegetarian diets and has a link for kid friendly recipes). My kids (15 and 16) aren't crazy about vegetarian and healthy foods, but will eat them if there isn't anything else, and they have to admit that they aren't bad!!! Unfortunately we raised them eating animal products, and now it is not easy to change their diet, although the younger one is starting to get interested in eating a more healthy diet.
