The best thing to do with the Napa cabbage is to discard the outer

leaves and then shred the inner tender leaves (sometimes yellow in

colour) use them in any veggie Chinese recipe or eat them as they

are in salads, also we make a coleslaw with them, they are very

versatile, and are know in the UK as Chinese cabbage... enjoy they

are full of goodness' and the yellow parts are said to produce a

substance that (allegedly) protects the eyes from disease.

If there is meat in it just try to sub it for any mock meat products.

It is great for juicing, and I use it that was, but I also like to cut into

chunks and put it in a microwave steam pot with a big handfulll of quick

cooking noodles and 1/2 cup soy sauce or Braggs aminos and cook it in the

microwave for a few minutes. It is great.

I always made it with red cabbage, but napa is traditional.

*Note: Use salt and/or a couple Tb of vinegar for safety,
