On a hot day out I like the juicy, sticky sweet fruits, the kinda stuff that forces you to wash your hands and face and arms which in turn cools you off! Watermelon, oranges, kiwi, frozen grapes... okay I could go on and on forever! Oh! Strawberries too! I am so craving Watermelon now! It's totally hot out today but I'm going to be stuck inside cleaning! Maybe I can convince DH to go get me some watermelon this afternoon! I usually just eat it raw, there's no better way in my opinion! Otherwise I whip up a nice fruit salad so I can enjoy all the fruits together! MmmmmmmmMmmmmm. Oh dratly, you said FRUIT. Now I don't know....yes, I do: the wild strawberries & blueberries in Maine. In VT the season is so short that when you get your hands on a perfect one you wish it could last forever. As for veggies I love green beans. Blueberries and blackberries are my faves to eat on their own or over cereals, but a ripe Honeydew melon is fantasmic. Got on my shorts, I've done some errands and now I'm ready for some fresh necterines, sliced up in a bowl, with a little lemon juice and sugar in the raw sprinkled on to them. I love peaches that way also. Strawberries are coming in to season here, and boy do they smell and taste good. Had some on the weekend sliced up with a little sugar. I often put them on pancakes and serve coolwhip on top of that, for a special breakfast. I've not frozen grapes before. I'll have to try that. Happy Cleaning to you. Got to do some here too. When I was pregnant with my 1st child I craved fruit. My husband ordered me the fruit of the month club from Harry & David. Every month I was sooooo excited when my box arrived. I craved pb & j sandwiches. we love our pineapple here, too. we roast it! yep, we roast lots of stuff! break off the top, put it in an 8x8 pan w/some water, poke a few holes & roast at 350 - 400F for about an hour. cool a little, trim, cut & serve. goes really well with pineapple sorbet. Guest guest Posted March 12, 2007 Report Share Posted March 12, 2007 I love all summer fruits but especially currants - redcurrants, blackcurrants, we even used to get white currants when I was a child although I've never seen any of those in recent years. I froze a lot of redcurrants last summer and I like to add a handful to my muesli at breakfast, still frozen. A spoonful of redcurrant jelly is lovely with nut roast. My favourite recipe for summer fruits, however, is this one which my father's wife makes when I go to visit in the summertime: Summer Pudding 8 oz (225 g) redcurrants 4 oz (110 g) blackcurrants 1 lb (450 g) raspberries 5 oz (150 g) caster sugar 7-8 medium slices white bread from a large loaf You will also need a 1½ pint (850 ml) pudding basin, lightly buttered Separate the redcurrants and blackcurrants from their stalks by holding the tip of each stalk firmly between finger and thumb and sliding it between the prongs of a fork pushing the fork downwards, so pulling off the berries as it goes. Rinse all the fruits, picking out any raspberries that look at all musty. Place the fruits with the sugar in a large saucepan over a medium heat and let them cook for about 3-5 minutes, only until the sugar has dissolved and the juices begin to run – don't overcook and so spoil the fresh flavour. Now remove the fruit from the heat, and line the pudding basin with the slices of bread, overlapping them and sealing well by pressing the edges together. Fill in any gaps with small pieces of bread, so that no juice can get through when you add the fruit. Pour the fruit and juice in (except for about two thirds of a cupful), then cover the pudding with another slice of bread. Then place a small plate or saucer (one that will fit exactly inside the rim of the bowl) on top, and on top of that place a 3 lb or 4 lb (1.3 kg or 1.8 kg) weight, and leave in the fridge overnight. Just before serving the pudding, turn it out on to a large serving dish and spoon the reserved juice all over, to soak any bits of bread that still look white.
