Too sweet. Soy sauce is salty. I use marmite, hot water, salt, and sometimes a bit of mirin. ----------------------- Soy Sauce Alternative An allergy cookbook I bought recently suggested mixing apple juice concentrate with apple cider vinegar as a substitute for soy sauce. -------------------------- Soy Sauce Substitutes I have a couple substitutes, though neither is a match for the taste. The first is a mix of mirin and seasoned rice vinegar in equal proportions. Sometimes I add salt, dulse, ginger, garlic/onion powder for depth of flavor. Sometimes i just use the mirin:vinegar mix and add wasabi when i eat sushi (vegetarian, of course). The other is from an old cookbook: the vegetarian gourment, bienenfeld and bienenfeld 3 Tbsp (45 ml) rice vinegar 2 tsp dark molasses (treacle) 3/4 tsp onion powder 1/2 tsp garlic powder It's a good stir fry sauce... but not exactly like soy. nothing matches fermented soybeans and MSG. ygg -- There's a whole folder of sweet and sour sauces in the files too. Guest guest Posted May 9, 2006 Report Share Posted May 9, 2006 You know, it can seem amazing, but simply salt can be wonderful on stir fry. Just make sure there is enough garlic and onions in your stir fry for flavor. A little (or a lot) sesame oil works wonders too. Don't over cook the veggies. It is a tricky point to find, but they are more flavorful if they are " just " done, not too crunchy, and not too soft. They are usually at their brightest color at that point. I have made a little cornstarch liquid and pressed garlic mixture and added it at the end, and it gives it a coating and thickens it a bit, if that is what you are looking for. Adding some pineapple, and tomato and bell pepper to the stir fry with the garlic cornstarch thickener make it into a sweet and sour. Hope this helps a bit. It is what we do at our house. Don't know who thought to mix picante and soy sauce, some creative soul, but the results are surprisingly good. This is my old standby for using up leftover picante sauce. 1/2 C picante sauce 1/3 C water 2 T soy sauce (or more to taste) 1/2 t ground ginger 1 T corn starch Mix sauce in a bowl. Stir fry vegetables to a tender crisp. Take the pan off the heat to lower the temp below boiling and add the sauce. Return to heat and stir till slightly thickened. Serve over rice.
