I added some chopped carrots, simply because I put carrots in almost everything. I soaked the beans overnight and put everything but the spices in the crockpot on medium, before I left the house this morning. Guest guest Posted March 18, 2007 Report Share Posted March 18, 2007 I made it today too, but used 4 cans of Great Northern Beans and Navy Beans in place of dried ones. I reduced the water some, because of not using dried beans and added a little curry powder to it. I also add carrots like Katie did and some celery, which I sauted with the garlic and onions. When it had simmered all together for about 15 minutes, I took the soup off the burner, uncovered it and stirred in some chopped fresh spinach... I left it off the burner, with the lid off and the heat of the hot soup cooked it just enough without changing the color. I also used a can of chopped tomatoes with green chilies(rotel) instead of just chopped tomatoes and it the green chilies added a nice spice to it. Yummmmmmmmm and so quick. Thanks Felicia.
