Lentil and Wild Mushroom Bolognaise

 

8 ozs. lentils

3/4 lb. mixed wild mushrooms

2 cloves garlic, crushed

1 red pepper

1 large spanish onion

1 tbsp. balsamic vinegar

1 bay leaf

1 sprig fresh thyme

1 tbsp. marmite

1 tbsp. olive oil

1 tbsp. tomato puree

2 beef tomatoes

vegetable stock

 

Chop onions, pepper and sweat in olive oil with lentils, bayleaf and thyme.

Add balsamic vinegar and reduce by half.

Stir in tomato puree, Marmite and garlic and cover the lentil with vegetable

stock.

Cook for 20 minutes until lentils are cooked.

Add the wild mushrooms, and diced tomatoes and cook for a further 10 minutes.

Season with salt and black pepper and serve with fresh pasta.

Garnish with freshly chopped parsley.

Serves 2.

What is Marmite? Any ideas what could I use as a replacement to it to keep

the recipe intact? Thanks.

sugar, no saturatated fats.good source of vitamin B and B12, Hope that answers

I think Vegemite and marmite are very similar and can probably be

used interchangable. No idea where to find either one in the US

though....

from what I have heard about vegemite, I don't want to find it. An australian

friend told me it resembles axle grease and smells like keroscene.

I think Vegemite and marmite are very similar and can probably be

used interchangable. No idea where to find either one in the US

They are very similar - I prefer Marmite, as I think Vegemite tastes

a bit sweeter. Cooks Thesaurus suggests that you could substitute

miso.
