When there are a lot of peppers at the farmers market I freeze a couple of gallons. The same for squash, tomatoes, herbs and anything else I can think of. I need a bigger freezer. I freeze them sliced and whole for sauces stir fry and for salad I squeeze the thawed tomato over my greens. I usually dip the fresh tomatoes in boiling water to get the skins off before I freeze them. You can always use them for tomato juice. When I am ready to turn off the heat tot the greenhouse in the fall I pick all the unripened tomatoes and leave then on the counter in the kitchen to ripen. Each day I sort through them and make juice of the ones that are ripe and cann a quart of two.
