I don't have a Thai recipe handy, but here is my favorite Japanese eggplant recipe. *****Broiled Japanese eggplant with ginger and miso****** Use the smaller Japanese (or italian) dark slender eggplants. (not the big globe ones and not the chinese purple ones) Rub with a little sesame oil and broil until the skin blisters a little and they get soft but are still a little undercooked. Mix the following: equal parts sweet light miso (light creamy yellow) with grated ginger. The amount depends on how many eggplants you have and how big they are. For medium eggplants, about a tablespoon of the mix will work. Add a little dark sesame oil. Not too much just enough that you can taste it (a little bit goes a long way wiht dark sesame oil). Cut slits in the egplants lenghtwise, and spon the mix inside. Sprinkle with sesame seeds. Now broil again, just until the seeds and topping are toasted. You may sprinkle chopped scallions on top. Serve with a spoon as a side dish or apetizer (or main dish for that matter...). This tastes really creamy and decadent. Quote Link to comment Share on other sites More sharing options...
