'raw' Apricot Balls

I created these today from an apricot cookie. These balls are

really good!

 

Apricot Balls

 

1 c. dried apricots

1 c. macadamia nuts

1 c. whole oats

1/2 c. choc chips or choc nibs

3 dates

stevia, or other sweetener if you desire more

liquid for bringing the mixture together.

 

In a food processor pulse the apricots til they are chopped up. Add

the macadamia nuts, pulse a few more times until they are chopped

and the two are combined somewhat.

 

Add the whole oats, chocolate and dates. Process well. Add stevia

or other sweetener, if desired. Gradually add just a bit of tea, or

other liquid to bring the mixture together. You won't need much.

 

Take a bit of the mixture into your hands and squeeze, then roll

into balls.

I've really been tempted by these recipes that you've been posting.

However, stevia is not approved over here in the UK so would it be ok

to add some more dates to add sweetness to the recipe in place of the

stevia? I notice that you only add 2-3 dates to your recipes and was

wondering what is the reason for that?
