Guest guest Posted April 11, 2007 Report Share Posted April 11, 2007 Christie, when I started creating these the reason I used dates was hopefully it would not only add a little sweetness, but that they would help hold the ingredients together. Raisins will help a little with this too, but I put raisins in so many things...I thought at the time the dates would actually go better with the apricots. After you add the moisture to bring it together in the processor..when you squeeze bits of the mixture to roll the balls, you can at that point see how well the dates hold the mixture together. I have been making those Vegan Lunchbox Apricot Date fudge balls and they hold together well with just the dates and the juice of half a lime. Rather than sdding desiccated coconut to the mixture, I roll them in it. Dates and apricots go very well together and adding macadamia nuts and chocolate to the mix sounds heavenly. I shall be trying these this week.
