books, cheese, and menu?

Hi all.

 

Couple of things.

 

#1. I just purchased a copy of The New Moosewood Restaurant Cookbook " , any

reviews?

 

#2. I'm reading a borrowed copy of " Fast Food Nation " also....the waiting

list on this book at my public library is at least 5 people long.

 

#3. I'm finding that since I completed my fast/cleanse I am getting " bound

up " a bit easier than ever...and I dont' like it one bit...this leads me

into #4...

 

#4. What does your typical daily menu look like as vegetarians??...I'm new

to this eating style, and while I have no desire to eat meat, I would like

to have a balanced diet, so taht everything in my body " moves "

appropriately..*L* Obviously fiber isnt' an issue with so many vegetables

right???

Hi MP,

 

I have been ovo-lacto-vegejunketarian for 30 years (eating lots of

processed foods) and have been a " whole foods " vegan (eating virtually

no processed foods) since January. Some people find moving to a diet

with lots of veggies, fruits and beans to be binding. Not me. But it

is not that uncommon. Make sure you're drinking enough water and

getting at least some mild exercise, like walking, every day.

 

I find it weird how bodies can react. I walk about 60 minutes per day

but I almost never drink water (or anything else). My food is full of

fluid. I eat large blended salads for breakfast (with some soymilk and

water, but not a lot, these are thick). I eat large salads for lunch.

Again, I don't have anything to drink and I use vinegar to dress the

salad. For dinner I usually have another big salad and some homemade

blended veggie/bean soup. The soup isn't made with lots of water and is

very thick. I don't eat between meals and I drink when thirsty, which

is almost never. And yet I have no binding issues whatsoever.

 

But I do walk every day. So, YMMV! (your mileage may vary)

 

I have lost 27 pounds since January. ;-)

Chese will do itl. I love mexican food and eat chese when I have it. I always

suffer for a day or two.

Yes, cheese can definitely do that! I used to love cheese but haven't

had any since January.

 

They're called " blended salads " but it's basically a fruit smoothie with

lots of greens. You need a powerful blender to make one of these (I

have a Vitamix) and here is how I do it:

 

Add to the blender, in this order:

 

- mango (I peel and cut the flesh off a ripe mango, but you can also use

frozen)

- frozen blueberries (organic, from Trader Joes)

- frozen mixed berries (ditto)

- 1/2 cup unsweetened soy milk

- 1/2 cup water

- handful Goji berries (if I have any on hand)

- 1-2 Tblsp flax seed (you can use meal or whole seeds - the Vitamix

will grind them up)

- 2-3 chard or collards leaves

- several kale leaves (I don't use the thick stem)

- baby spinach -- stuff the container to the brim as full as possible

 

Blend it up, using the tamper to force the greenery into the blades. It

makes 2 glasses and I drink it all, using a spoon to get the last bits.

It's very thick and is usually brown or muddy burgundy in color.

 

There are endless variations to this, of course! This is just what I do

these days.

If you are suddenly incrreasing your fiber intake, you really do need to

increase your

water/fluid intake to keep things moving. Fiber content depends on the kinds

of fruits

and veggies, but for the most part if you are eating the recommended 5-9

servings of

produce, your're probably getting close to the recommended fiber 25-38 grams

per day

for an adult. I don't think I have time to consume that many veggies and try

to include

oatmeal and fibery cereals.

I use a lot of online resources for recipes and I've finally started

adapting meat-based recipes to the Morningstar Farms veggie substitutes.

Most of our food is pretty much normal. Here's what I eat most days:

 

Breakfast -> a biscuit with a veggie sausage patty, fat free cheese

slice and a " fried " egg white, or Morningstar Farms Breakfast Scramblers

nuggets (my 1 year old granddaughter loves these), or they've got a new

thing like the Jimmy Dean Scramblers. It has veggie sausage crumbles,

potatoes, bell peppers and you cook it for 8 minutes and then add an egg

to it and scramble it in. Some mornings I just have a fruit salad

(watermelon, cantaloupe, honeydew, blueberries, strawberries and grapes)

and put some fat free vanilla yogurt and a spoon of Grapenuts on top of

it.

 

Lunch -> lots of days it's just a salad - mixed greens, green onion,

mushrooms, cucumber, tomato and dressed with a teaspoon of olive oil and

garlic flavored red wine vinegar with salt and pepper. Or a veggie

burger or hot dog or chicken patty with baked french fries or a baked

potato.

 

Dinner -> It just depends on what we feel like eating. I buy stir-fry

veggies and we'll fix those with either rice or noodles, depending on if

we want lo mein or just stirfry. We hardly ever use any sauces on them

now, but I do like to add just a few drops of hot sesame oil (believe

me, just a small drizzle will work for a whole pan of veggies!) and then

we serve it with the rice or noodles or sometimes, shredded, lightly

" fried " cabbage. Or I'll buy a Taco Bell kit - my son loves the Double

Decker Taco kit and we make it with the veggie crumbles. The Santa Fe

Taco kit works well with the Morningstar Farms " Chicken " strips, and he

likes to make burritos with the " Beef " strips. The only thing he won't

eat is veggie pizza. He doesn't like the cooked spinach on it so that's

the only time I buy him something that has meat on it. Some nights

we'll make a bunch of roasted veggies, especially if we have just bits

and pieces of different frozen or fresh veggies. I'll spray a large

jelly roll pan with nonstick nonfat cooking spray, cut up a couple of

potatoes into bite sized pieces and add whatever other veggies to the

tray. They all get sprayed and then topped with salt and pepper, or

whatever spices go good with that veggie. Our latest favorite is

" fried " tomatoes. They get topped with lemon pepper and are really

good! Last night I made some and he took the 3 largest slices.

 

One good online source for veggie recipes and information is at

About.com. If you go to that site and put Vegetarian in the search

engine, it should take you to the vegetarian page and you can sign up

from there for a weekly newsletter that has lots of tips and pictures of

things like how to drain and press tofu. AllRecipes has some pretty

good vegetarian recipes too. I get their Rss Feed every day and there's

always at least one meatless recipe. I've found that almost every

recipe that calls for hamburger crumbles can be substituted with the

Boca Burger crumbles. The only thing that hasn't worked well is the

Hamburger Helper type foods. Also, Boca Burger and Morningstar Farms

have online cookbooks you can download that tell you how to make

different meals with their products.

 

I don't have any vegetarian cookbooks, I mostly just glean recipes from

different sources and have a database that I use for my own personal

use. If a recipe calls for chicken or beef broth, you can usually

substitute some veggie broth (Swanson's is good). I hope some of this

helps!

I love the New Moosewood Restaurant cookbook. I originally got it

from the library and then went out and bought it. There are so many

delicious recipes and the best thing is that they are so simple and

easy to make. A lot of the recipes I can make with food I already

have in the house so I don't have to go out and buy anything extra.

It's by far my favorite recipe book - I highly recommend this book to

anyone that does not have it yet.

I haven't seen the most recent edition, but I love this cookbook, too!

In fact, it's one of two cookbooks that I used so much that I wrecked

the binding and eventually bought myself a new copy :) Enjoy!

Thank you. Yes, the measuring out is a habit from

CRON (Calorie Restriction with Optimum Nutrition).
