Dear Portia:

I am sure it will work in a bundt pan. Many years ago I used to make a

carrot cake in an angel food cake pan and it was very, very good.

For the cake I made in an angel food cake pan I used a frosting made with

brown sugar. It was great. I will have to hunt for the recipe and if I find

it, will post it to the list.

I have only seen carrot cakes as sheet cakes. I have

a recipe, do you think it would work in a bundt pan or

is that going to be to high and thick?

I don't want to mess it up since the ingredients are

expensive and it's time consuming to assemble.

I have made carrot cake as a regular two layer cake, but I don't know about a

bundt pan. I think if I were doing it I would turn the over temp down a bit and

plan on cooking it a bit longer because the shape in the bundt pan is thicker.

I had a really great cream cheese frosting.
