I used to make eggless egg salad or tofuna (mock tuna

sandwiches) for my niece and nephews. You can also

send a nice romaine lettuce leaf and let them add

their eggless egg salad to it or even Belgian endive

is delicious stuffed. I use Vegenaise and it is

better than using shelf f mayo, no preservatives or

egg products, I'm sure it's safer in a school lunch.

My niece was big on little baggies filled with things

and then she would make a salad, she liked thin carrot

sticks, celery, olives, waterchestnuts, green onions,

chopped cabbage salad and a little mini container of

salad dressing, some type of a vinegar & pil blend.

Mo and Tony liked friend egg sandwiches, stuffed

celery, handful of chips, they all 3 loved cold

leftover pizza and spaghetti, few homemade cookies or

bars, granola to munch on, carrot salad, pasta salad,

sandwich wraps, you can stuff flour tortillas and fold

and slice them into delicious pinwheels and place in a

small container, come on Mama be creative and let them

help you with a few creations. Hey, the rice balls

would be perfect too.

They were eating vegetarian meals and no one picked at

them, matter of fact most of the kids wanted their

lunches. I think bologna sandwiches and Ding Dongs

get very old and tiresome after a while.

Thanks Donna. I would love to try tofuna but can't find it in VT. We eat dairy

so I have packed boiled eggs but the boys don't like room temp food that should

be warm (by their standards)..lol your right I will continue to put my thinking

cap on.

FYI Steph, Eggs are not dairy. Dairy includes milk and milk products like

cheese (http://en.wikipedia.org/wiki/Dairy)

Thanks I guess I forgot to mention we eat cheese. we don't drink milk but eat

yogurt and cheese.
