Nice served on a bed of fresh spinach and romaine leaves, with a side of favoite dipping sauce. I like either mustard , sweet and sour or Veganaise. Spinach-Faux Sausage Rice Balls 2 cups finely chopped spinach 4 cups cooked rice..(I used Basmati) 1 cup soy sausage 1 med. onion diced 3-4 garlic buds minced or 1/2 teaspoon garlic powder 1 teaspoon fresh or dried basil 2 Tablespoons olive oil Optional: salt and pepper to taste Sautee chopped onion,garlic and soy sausage in two tablespoons olive oil until lightly browned . Add chopped spinach and herbs/spices and simmer until spinach is wilted. Add to cooked rice and form into bite size balls. Also if you over-cook regular rice it too is just naturally sticky. I refrigerated some of the left over rice balls , ate some cold and re-heated some..They remained firm little rice balls. Is it in the refrigerated case in the store or does it need to be reconstituted? Where they keep the tofu and soy cheese. It is in a package(roll type) and is the same texture and moistness as regular sausage. You can make patties or crumbles ..Use it like you would any sausage. Great for scrambled tofu and 'sausage' for breakfast. Also makes a good 'sausage' gravy for biscuits. Almost tastes too much like sausage. LOL My non-veggie friends can't tell the difference.
