Cucumber, Radish and Rose Petal Sandwiches

I use pink or white rose petals, they have the best

flavor.

 

 

Cucumber, Radish and Rose Petal Sandwiches

 

2 medium sized cucumbers

4 radishes

8 thin sliced brown bread

Pink or White rose retals

mayonnaise or Vegenaise

Mrs Dash

 

Peel, half, seed and finely chop the cucumbers and

chop radishes. Place in a bowl add enough mayonnaise

to make it spreadable. Butter the slices of bread, and

for each sandwich spread on enough cucumber mixture to

cover lightly. Lay rose petals on top of mixture, top

with another piece of bread. Trim the crust if you

desire, vut sandwiches and serve. Makes 4 sandwiches.

Where do you get your rose petals? Do you happen to know what variety

they are? I've toyed with growing a small rose bush for culinary

purposes here but I haven't been able to figure out what kind to grow.

It's not the usual question about roses at the local nursery, I think.

I am not sure whether they have roses specifically, but our local SuperTarget

carries edible flowers in their produce department.

Ah, thanks! I got the idea somewhere that a more fragrant rose might

have more flavor, but I never heard the dark vs. light thing before. My

exposure to rose as an edible came from Renaissance cookery. I know not

to eat roses from the grocery store, or probably from the flower shop,

at least not without talking to somebody knowledgeable about their

source. For me to grow one for culinary purposes, I'll want to

container-grow it as much of my soil is a little suspect.
