Guest guest Posted April 22, 2007 Report Share Posted April 22, 2007 * Exported from MasterCook * Cheesy Lentil and Vegetable Pie Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Bakes Lentils Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon sunflower oil 1 onion -- finely chopped 1 pound carrots -- diced (500g) 2 cloves garlic -- finely chopped 1 can low sugar low salt baked beans (English type - vegetarian) -- 415g can 4 ounces red lentils -- 125g 3/4 pint vegetable stock -- 450ml salt and pepper to taste Topping: 1 1/2 pounds baking potatoes -- 750g 5 ounces savoy cabbage -- finely shredded - 150g 3 tablespoons semi skimmed milk -- up to 4 3 1/2 ounces cheddar cheese -- grated - 100g Heat the oil in a pan, add the onion and cook, stirring occasionally, for about 5 minutes or until softened. Stir in the carrots and garlic and cook for 2 minutes. Mix in the beans, lentils and stock and season. Bring to the boil, cover and simmer for 20 minutes until the lentils are tender, adding extra liquid if necessary. Meanwhile, make the topping. Cut the potatoes into large chunks and cook them in the base of a steamer, half-filled with boiling water, for 15 minutes. Add the steamer top, fill with the cabbage, cover and cook for 5 minutes until both cabbage and potatoes are lovely and tender. Drain the potatoes, return them to the pan and mash with the milk. Stir in the cabbage and two thirds of the cheese. Spoon the hot carrot mixture into the base of a 2.5 pint dish. Spoon the potato mixture on top, then sprinkle with the remaining cheese. Place under a preheated hot grill for 5 minutes until golden brown. I used olive oil, and could not get savoy cabbage so used a leafy tenderheart. I also peeled the potatoes, which it doesn't mention and I might not have been meant to, but I thought it made sense :-). I also used a little butter instead of the milk. Nutr.
