Guest guest Posted April 22, 2007 Report Share Posted April 22, 2007 My kids love eggs too so we often make egg souffles, which are easier than they sound. In my opinion, it's the easiest way to make eggs because you can just shove it in the oven and go... plus it is much lower in fat than a quiche. Whisk a bunch of eggs together, as many as you'll need, and add some milk or water as you would with scrambled eggs. Mix in whatever veggies you like and some shredded cheese (parm, cheddar, mozz... whatever you have on hand) and pour into either a 9x9 square pan (for 6-8 eggs) or a larger casserole dish (for 10-14 eggs) depending on how big it is. I'd suggest spritzing the pan with Pam or whatever oil spray you like before you add the eggs. Bake at 375 for approx 30 minutes. You'll know it's done when the top is completely even and resists sagging to the touch. It will at least triple in size. You can just cut it into squares and serve.
