With all the meal planning talk I thought it would be good to post what

everyone was going to make for dinner tonight to give the others some

ideas.

-I'm having veggie burgers, sweet potatoes, romaine lettuce with cherry

tomato salad. Dressing is one I made yesterday..I call it Sweet and

Sour. Actually it is just white vinegar, olive oil and organinc raw

sugar. Maybe I'll just skip the rest and have desert, frozen strawberry

yogurt with chocolate topping. LOL

my fiesta rice... it's a regular on the menu every week along with rotini pasta

topped with my mega veggie sauce...and 1 night every week we have " ginormous

salad " night...now I only 4 more nights to plan for...;)

Veggie burgers sound nice and easy! DS has a t-ball game tonight, awful

timing on the league's part. All the weekday games are at 5 or 5:30. We

usually eat dinner at 6, so last Thursday during our first weekday game, the

kids didn't do so well. We got home at their bath time so everything got

pushed back an hour and a half! I was thinking of making something big since

my sis and her bf are in town for a couple days and taking the time to watch

DS' game, but I think I'm just going to cook up that box of Morningstar

veggie burgers and make a potato salad or something like that to take with

us.

Donna's wonderful combination of anasazi beans with carrots, onions,

garlic, cumin & coriander (with a little chopped celery thrown in 'cause

it needs to be eaten), along with Petro's yummy 'Sweet Spice' Brown

Rice. (We made lots of both yesterday.) Any wonder why I love this

group so much? :^) Haven't decided what will go along with it--probably

some mix and matchy version of salad, steamed spinach and/or broccoli.

While it's true that you find great recipes in our group, not many

people have the energy to cook them up the way you do! LOL Your dinner

sounds great.

 

Me, I'm having a big salad and a cup of my homemade blended veggie soup

with corn and (my one vice) TVP. I am going to give up the TVP once its

used up, though, as I don't think it' helping with my thyroid problem. :-(

 

I'm excited because this week I'm getting my first CSA box from Terra

Firma farms. Yeah! :-)

Barilla Tortellini, Hunt's spaghetti sauce. I have rehearsal tonight so

no haute cuisine. AND DH loves simple food, especially tortellini, so

I look loving and thoughtful without having to do a lot of work. ;-)

 

I'll probably eat anything that isn't nailed down after rehearsal

because I eat lightly beforehand and get revved up during. Fortunately,

Tuesday is my grocery day so I can restock.

First i want to thank everyone for their answers to my

questions and dinner menu planning.

 

Now, about the soy/thyroid thing...Someone at a small

health food store told me about it (i don't live near

any big ones)...and i thought: hm...if i have an

overactive thryroid and eat lots of soy why doesn't it

go down?????

 

Does it affect Asians?

 

Does it affect only those with under active and not

people with just 'normal' thyroids or over active?

 

hm...no one seemed to know so i thought i'd ask it

here...

 

it sure would be nice to slow mine down :-)

I love the tortellini in the dairy case at Costco. They have dairy case jars

of basil pesto not far away. One each of these two items ( about $8) make 4

meals for hubby and I. He likes them even more than I do, even though he knows

they come premade and it only takes me15 minutes from " I don't know what I am

going to make for dinner. " to " Come and get it. " .

I make rice and curried lentils and apples. Very quick and easy.

 

1/2 cup of dry lentils

2 cups of water

2 tart apples

2 carrots

1 red onion

salt and pepper to taste

Hot Madras Curry to taste

Pinch of fennel seeds 1/8 cup of yogurt (I didn't have any so I used sour

cream. It was just a bit more rich)

 

Place all of it in a pot. Simmer intil everything is tender. Serve over

rice.

We love the tortellinis also. I just wished that

Costco had even more vegetarian items in the premade

frozen area for fast dinners. LOL --angeldove37

I had crockpot yellow lentil and parsley soup with an olive ciabatta

roll followed by vanilla vice cream made in my new (v)ice cream maker.

Well, mine was going to be leftovers from last nights Mexican fiesta but due

to severe heartburn, I'm going for baked fries and a veggie burger.

Curried Red Lentil and Spinach soup (from Atlas's " The Vegetarian 5-

Ingredient Gourmet), with mustard greens instead of spinach, with a

side of broccoli sauteed with garlic, " popped " mustard seeds and red

pepper flakes. Then a pear and some raw almond butter for dessert.
