Looking forward to your recipes. What recipes do you have that use Pears in them? Also she asked, how many of you use Meat Substitutes or create similar substitutes? Guest guest Posted April 30, 2007 Report Share Posted April 30, 2007 I seldom use alternatives from the store. I make all types of patties and loaves and the recipes are from our files. Potato-lentil burgers, Peace Loaf, bean patties, lentil loaf, okra patties, chayote and potato patties, mock crab cakes, and the list goes on and on. I freeze them and they make a quick lunch or side to a dinner recipe. Guest guest Posted April 30, 2007 Report Share Posted April 30, 2007 This is a recipe from my childhood: for each serving: on a bed of lettuce, place ½ canned chilled pear, a dollop of mayonnaise, shredded cheddar cheese. I have not tried it with nayonaise or soy cheese. I am sure there are some great recipes out there. I just haven't had the time to indulge. I mostly try to make dishes with just veggies and rice or pasta but,I do use meat subs occasionally. My absolute favorite is gardenburgers Mama Mia Meatballs...they are even better than the " real " ones and the gardenburger riblets are great, can't tell the difference with those either. Even my husband had to dig the box from the garbage, he didn't believe they were veg! I do pretty regularly have a boca spicy chicken patty for lunch with some veggies and my daughter has the vegan boca burger...that's pretty much all we use, if I have a meat recipe, I try to just leave it out. Guest guest Posted May 1, 2007 Report Share Posted May 1, 2007 For us we use meat substitues about 3x a week. We make all the traditional meals like sloppy joes, tacos, corndogs, shepards pie. Since it has been only 3 years and the kids miss many traditional meaty meals we do the best we can here is my husbands all time favorite. Potato Not So Sausage Casserole 1 pkg TVP 1 can condensed cream of mushroom soup** 3/4 cup of plain soymilk 1 meduim onion fine chopped 5 cups sliced potatos with skins 1/2 cup of vegan butter 1 1/2 cups vegan cheese (we don't use so it is optional) 1. Preheat the Oven to 350 2. Place the TVP,soup,onions, soymilk in a medium bowl and mix well 3. Place half the potatos in a 9 X13 pan, layer half the mix on top then repeat ending with the soup mix on top. Cut the butter in small slivers all over the top of the casserole 4. Cover with foil and bake 1 1/4 hours or until potatos are tender and sprinkle with cheese if desired. Return to the oven uncovered until cheese melts. **you can saute a pound of mushrooms and add rice milk to make it creamy.** So comforting Ahhh...imagining that irresistible " new car " smell? An experiment gone fabulous!! 6 pears, peeled, cored & quartered 1c water 1/2c real maple syrup 2TB lemon juice In a wide pan that allows pears to be in 1 layer, put all ingredients. Top one half with blue cheese and put the other half on top, like a sandwich and put it in a pan. (You can slice a little off one side of the pear to help it lie steady.) Drizzle with melted better and sprinkle with demerara sugar. Add a little water to the pan to help prevent burning. Bake at 400 degrees until golden brown. paraphrased from Irish Baking Book by Ruth Isabel Ross I've had to tweak recipes from this book to get them to work for me, but they tend to be tasty once I've got them tweaked up. :-) -ginger north of Boston where it was spring all day! She roasted squash, onions, small baby red potatos, broccoli and cauliflower, zuccini and other veggies that she could cut length wise. She put them all into a pan and sprinkled olive oil and balsamic vin. on them -- then sliced pears and put them on top. She coved the pan and roasted them at 350 for one hour and a half. She said that even her grandchildren loved it. She said that the pears made it!!
